Homemade Guacamole, 3 Ways!

Confession time:  I love guacamole.  It's easily one of my favorite things about going out for Mexican
food, and I can't have it in the house or I eat all of it.  Luckily all of those Omega-3s in avocados are good for you (but also that's bad too, because I end up justifying eating a ton of it!).  Guacamole is one of those things that can basically be a meal for me, or just a really great snack.

With Cinco de Mayo coming up, I've been getting my guacamole fix when I've eaten out, but I finally decided to try my hand at making some of the good green stuff all on my own.  I've made guacamole before using just a packet of seasoning mix that I picked up and a few mashed avocados, but I wanted to make the real stuff, so I played around and came up with a few insanely easy recipes for three different types of guacamole...enjoy!



WHAT YOU NEED:
+ Avocados (2-3 per batch of guacamole)
+ 1/2 tsp. sea salt (all recipes)
+ 1/4 tsp. cumin (all recipes)
+ 1/4 tsp. garlic powder
+ Juice of 1/2 of a lime (all recipes)
+ Juice of 1/2 of a lemon (all recipes)
+ Fresh salsa (make your own with tomatoes & onion or buy it fresh!) (all recipes)
+ Cilantro (all recipes)
+ 1/2 c. plain non-fat Greek Yogurt (Greek Yogurt recipe)
+ 1 jalapeño pepper (spicy recipe)
+ 1/4 tsp. cayenne (spicy recipe)
+ Great dippers!  I love dipping Delimex Taquitos into my guacamole! 

Basically, the base of all three variations is totally the same.  You start with mild guacamole and then go on from there if you're making the greek yogurt or spicy version!  Feel free to play around with amounts.  Homemade guacamole is all about making it to your taste!


MILD GUACAMOLE // 
Mash 2-3 avocados in a bowl and add in 1/4-1/2 c. of fresh salsa (depending on preference).  Then, add sea salt, cumin, lemon & lime juices, and mix all together well.  Chop a few sprigs of cilantro (to taste) and add to the guacamole mixture.  Garnish with a lime wedge.  That's it! Enjoy!


GREEK YOGURT GUACAMOLE // 
Mash 1.5-2 avocados in a bowl and add in 1/4 c. of fresh salsa (depending on preference).  Then, add sea salt, cumin, lemon & lime juices, and mix all together well.  Chop a few sprigs of cilantro (to taste) and add to the guacamole mixture.  Finally, add greek yogurt and mix into guacamole.  Garnish with a sprig of cilantro.
This greek yogurt version is a little bit lighter on the fat and to the taste, as you're cutting down the amount of avocado used.


SPICY GUACAMOLE // 
Mash 2-3 avocados in a bowl and add in 1/4-1/2 c. of fresh salsa (depending on preference).  Then, add sea salt, cumin, cayenne pepper, lemon & lime juices, and mix all together well.  Chop a few sprigs of cilantro (to taste) and add to the guacamole mixture.  Finally, finely chop a jalapeño pepper and add to the guacamole to taste.  (Depending on how large your pepper is, I'd say you'll use between 1/3-1/2 of the pepper)  Garnish with a slice or two of jalapeño.  Enjoy!






I love serving guacamole alongside Delimex Taquitos, Tacos, or Tamales.  The Delimex Taquitos are the perfect things to dip into the guac, and I love how the avocado cuts the spice in them!  This little treat, whether you eat it as a snack or as a meal, is a fun (and tasty) way to celebrate Cinco de Mayo! You can find Delimex Taquitos, Tacos, and Tamales in the freezer section at your local Wal-Mart!  They're available in a number of different varieties and quantities, so you're sure to find something for everyone to celebrate the fiesta that is May 5th!

  1. These look amazing! I only recently decided to try guacamole, and just realized I like it! (Doesn't hurt that it's supposed to help your hair grow and I'm trying to grow mine longer... Haha). Can't wait to try the spicy one! :)

  2. Oh man this sounds so good! I used to hate guac because all I had tried was the premade stuff but then we tried some tableside guac at a restaurant and I was hooked! These recipes look delicious!

  10. Yes! I've had to learn to like just plain avocados, but one of my other favorite ways to eat them is on toast with fresh tomatoes! Yum!

  13. Those little tacquitos look so cute!! I'm right there with ya...I LOVEEEE guacamole. LOVE. I occasionally indulge with a fork. But I've yet to try it with Greek yogurt, so I'll have to pick up some of that and give it a go this weekend!
